How to reverse engineer?

If I want to hook into some application, I need to know the classname and API being used by that application. Is there any tool or known procedure which can help me to do that on OSX?

Order the New Book by Mr. J when it is released & also read previous book by Mr. J chapter No. 4 (interpose) Mr. J might say outdated previous book but very useful in understanding how everything is evolved. In short you should know Mach-o file format very very accurately.
